
First of all, Jerez is the name of the town where most sherry is made. For whatever reason the English refer to it as sherry and not Jerez. The best places to sip a copita, or a small stemmed glass, of Sherry are at the many bodegas located throughout the town of Jerez. All bodegas are generally closed for the month of August. By the way, in the bars of Seville a glass of sherry is usually served very cold and categorized by two major types: fino and oloroso. Types of fino include manzanilla, fino, amontillado, and palo cortado. Types of oloroso include oloroso, Pedro Ximenez, and cream (a mixture of oloroso and Pedro Ximenez wines). The first five of the following seven bodega addresses are located in the town of Jerez, while the last two are located in nearby towns still within the region of Cadiz.
